Altitude
Above six hundred metres the forage changes: more wild grasses, less silage, small barns. The milk that results has a different grain, and the wheel shows it.
The twenty-four months
At twenty-four months the paste flakes, the crystals are felt under the teeth, the sweetness remains but becomes long. It's the ageing that best withstands a journey and a December table.
Look for the finish: if it closes short and salty, it isn't the right one.
In the selection
- a half-kilo wedge, vacuum-packed
- an aged balsamic vinegar alongside
Nothing else is needed.
